Ingredients
Wet & spices
- 2 sticks butter
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp salt
- 1 tsp cinnamon
- ½ tsp cloves
Dry
- 1½ cups flour
- 1 tsp baking soda
- 3 cups oats

- 2 cups unsweetened coconut
- 1 cup chopped walnuts
- 1 cup dried cherries, coarsely chopped
Directions
- Preheat oven to 350°F.
- Beat butter, brown sugar, granulated sugar, eggs, extract, salt, cinnamon, and cloves until fluffy (about 3 minutes).
- In a separate bowl, mix flour with baking soda.
- Add the flour mixture to the wet ingredients and mix until combined.
- Add oatmeal and mix just until combined.
- Stir in coconut, walnuts, and dried cherries.
- Drop by spoonfuls onto a cookie sheet lined with parchment paper.
- Bake 10–12 minutes.
- Let cool 2–3 minutes, then move to cooling racks.
